Baking and trying out new recipes has been my go to hobby lately as we are stuck inside due to covid-19. I have always wanted to try making vegan cinnamon rolls and what better time than now!
RECIPE
Servings: approx. 20 rolls
Ingredients
DOUGH
• 2 cups almond milk
• 1/2 cup melted vegan butter
• 2 tbsp organic sugar
• 2 1/4 tsp active dry yeast
• 4 cups all purpose flour
• 1 tsp salt
FILLING
• 1/2 cup melted vegan butter
• 1/2 cup brown sugar
• 1/2 cup ground cinnamon
ICING
• 1 1/2 cups powdered sugar
• 3 tbsp almond milk
• 1 1/2 tsp vanilla extract
EXTRA INGREDIENTS
• flour for dusting
• butter for baking pan
• olive oil (about 2 tbsp)

Method
DOUGH
1. To begin making the dough, add the 2 cups of milk (warmed in microwave), 1/2 cup melted vegan butter, and 2 tbsp of organic sugar into a large bowl and mix well. This mixture must be warm not hot. Add the 2 1/4 tsp yeast to the mixture and let sit for 5 minutes.
2. Next, sift the 4 cups of flour into a medium bowl, add the 1 tsp salt, and then mix together. Slowly add this flour mixture (1 cup at a time) into the large bowl with the wet ingredients. First you can mix with a spoon, eventually you will have to mix with your hands and form into a ball.
3. Once the dough ball is formed, place into bowl coated with olive oil (so the dough will not stick) and rub some olive oil on top of the dough as well. Cover bowl with kitchen towel. Let sit at room temp for 1 hour or for 1/2 hour in the warm oven (set oven to 170°F, once warm turn off and place bowl inside). The dough should expand and double in size.
FILLING
4. Roll out the dough on clean surface using extra flour to dust the surface first (to not stick). Use rolling pin to roll the dough out in a rectangular shape (approx. 1/2 inch thick).
5. Once rolled out brush with the 1/2 cup melted vegan butter. Combine the ground cinnamon and brown sugar and spread evenly on the rolled out dough.
6. Tightly roll the dough in a log. Once completely rolled, use a serrated knife to cut sections 1 1/2 to 2 inches thick. Place sections in a well buttered baking pan.
7. Let the dough rise again for 30 minutes at room temp or 15-20 mins in the 170°F warmed oven.
8. Remove from the oven and glaze with more butter. Set oven to 350°F and bake for 23-25 minutes or until slightly brown on top.
ICING
9. To make the icing, whisk together the powdered sugar, almond milk, and vanilla extract until smooth.
10. Pour icing over warm cinnamon rolls. Enjoy!
