You only need a few ingredients to make this whole-foods plant based snack, so let’s get to it!

How To Make Chia Pudding
The basis for chia pudding is simply chia seeds and milk.
You mix these two ingredients together and let them sit over night (or for at least 2.5 hours) in the fridge.
The chia seeds will absorb some of the milk and expand creating a creamy and thick consistency.
Then comes the fun part! You can add any extra ingredients, like vanilla extract, to make it embody any flavour you want.

This vegan chia pudding parfait recipe is naturally sweetened with Better Stevia.
Better Stevia is a calorie-free, organic sweetener that makes the perfect substitute for table sugar and artificial sweeteners.
A little bit of this powder goes a long way because it is very concentrated. If a recipe calls for 1/2 cup sweetener, you only need to use 1 tsp of Better Stevia!

Strawberry Vanilla Vegan Chia Pudding Parfait
Ingredients
Pudding Layer
- 1 cup non-dairy milk
- ¼ cup chia seeds
- 1 tsp vanilla extract
- 1 pinch of salt
- 1 scoop Stevia
Smoothie Layer
- ¾ cup non-dairy milk
- 1/2 frozen banana
- 1/2 cup frozen strawberry
Instructions
- Combine all of the chia pudding ingredients together and mix well.
- Place the mixture in the fridge overnight or for a minimum of 2.5 hours
- When ready to serve, add all the smoothie ingredients in a blender and blend until smooth.
- Transfer the smoothie on top of the pudding. Top with fruit, granola, and coconut shreds.
