For when you want to treat yourself to a dessert, but don’t feel like making a whole cake try this mini vegan raw blueberry cheesecake.
It’s comforting, tasty, and hits that sweet spot!
If you want to make this into a whole cheesecake multiply all the measurements by four. Otherwise this recipe makes one mini cheesecake (4×4 inch springform pan). These measurements and ingredients are very similar to my Pink Pitaya Raw Cheesecake, so head over there for the instructions on how to make this into a full cake!
INGREDIENTS
Base
• Cinnamon (1/8 tsp)
• Cocoa Powder (1/8 tsp)
• Dates (3-4)
• Nut of choice (1/2 cup) – Cashews, almonds, or walnuts
Bottom Cake Layer
• Cashews (1/2 cup)
• Coconut Milk (2 tbsp – shaken)
• Maple Syrup (1 tbsp)
• Vanilla Extract (1/2 tsp)
Top Cake Layer
• Cashews (1/2 cup)
• Coconut Milk (2 tbsp – shaken)
• Maple Syrup (1 tbsp)
• Fresh Blueberries (1/2 cup)
INSTRUCTIONS
1. Begin by de-pitting the dates and soaking them in hot water for about 5 minutes. Soak the cashews (for the layers – do not soak the nuts you use for the base) as well for about 30 minutes in hot boiling water.
START WITH THE CRUST:
2. Place the dates in a food processor until they are blended well. Next, do the same thing with your nut of choice until they become “chopped” finely. Please reference the photo below.
3. Mix the dates, your nut of choice, cocoa powder, and cinnamon with your hands until it becomes combined and press it down onto the bottom of a springform pan. Now your first layer is complete!
TO MAKE THE BOTTOM CHEESECAKE LAYER:
4. Blend the 1/2 cup of soaked cashews, with the coconut milk, maple syrup, and vanilla extract. Once smooth pour over the date layer. Set in freezer for approx 20 minutes.
THE TOP LAYER:
5. In the meantime, we will make the top layer. Add the 1/2 cup of soaked cashews, with the coconut milk, blueberries, and maple syrup and blend!
Pour over the bottom layer (that is now slightly frozen). Place bake in freezer.
6. Wait approximately another 20-30 minutes for the entire cake to be set. Once it comes out you can add fresh or frozen blueberries on top!
