I know you’ll be shocked at how yummy gluten free AND vegan meatballs can be, so let’s get cooking!

How Do You Make Gluten Free Meatballs?
It’s easy! All you need is a gluten-free binder. Something to hold and stick all of the ingredients together.
I tested this recipe with a few gluten free options such as chickpea flour, gluten-free bread crumbs, oat flour, but the gluten-free binder that I found worked the best was… Cassava flour!
What is cassava flour?
Cassava is white in colour and has a neutral taste so it won’t compromise any flavours in a recipe. Therefore making it the perfect gluten-free baking and cooking substitute!
Cassava flour is made from grinding up the cassava root vegetable. It contains fibre, antioxidants, and plenty of the key vitamins and minerals our bodies need to be healthy, especially vitamin C.

Ingredients You Will Need
Cassava Flour: As we have established you will need a gluten-free binder (if you aren’t gluten sensitive you could also make the recipe with plain flour)
Lentils: This recipe couldn’t be called gluten free vegan lentil meatballs without lentils! Lentils are also a great source of plant-based protein
Garlic: These meatballs are Italian-inspired, so bring on the garlic!
Onions: To add some extra texture and flavour
Nutritional Yeast: One of the few plant based B12 sources
Tomato Paste: A staple for Italian dishes
Parsley: To add some colour and extra deliciousness
Spices: For these gluten free vegan lentil meatballs you’ll need salt, paprika, oregano, and black pepper
